Christmas Coffee / zambia. notes, almond, dark chocolate, red currant. Region / Mbala, Zambia Variety / Marsellesa PB Process / Fully Washed Roast / Medium Altitude / 1600 MASL Notes / Almond, Dark Chocolate, Red Currant Roast Profile / Suitable for Espresso This coffee was processed on-site at Mount Sunzu’s own wet and dry mill. After selective picking, ripe cherries were floated, before being pulped and dry fermented for 24 hours (’dry’ meaning not submerged in water). Fermentation took place in 1000ml tanks with naturally occurring yeast and bacteria.. Flavor profile: Chocolate, Nutty, Winey.
