El Salvador - Los Luchadores Processing Method: Anaerobic double soaked Varietal: Pacamara JASAL, the farm that produced this microlot, is known for its processing flexibility and eye for detail, producing many top lots, and Los Luchadores is the ‘Prize Fighter’. Extra commitment and effort were taken to ensure that the best ripe cherry was selected for this microlot. Pacamara (an El Salvadorian cross between Pacas and Maragogype) is gathered from two contributing farms. El Molino provides the most with a smaller contribution from Finca San Francisco. Both are part of the Jasal estate.
