Description

Honduras Yolanda - Limited Edition. Yolanda, her husband and her three sons manage their farm in Las Pacayas in Corquin, Copan. This coffee is grown at an elevation of 1,200 masl so quite lowish and therefore resulting in a soft bean with a pleasant smooth acidity. The variety is Parainema and the farm is very small at only two hectares. Most of the farm is native forest with shade trees where Yolanda and Luis manage their farm biodynamically. Once the coffee has been hand-picked they transfer the coffee to the mill which is at 800 masl where the coffee cherries are washed and then dried between 20 and 30 days.
