Description
Musaza, Rwanda. “Musaza” means elder in Kinyarwanda, Rwanda’s national language- a nod to wisdom, respect, and tradition. This lot was processed at Rwamatamu’s Mbare washing station in Muhanga, in Rwanda’s Southern Province. After harvest, the cherries are carefully laid out on raised beds to dry in the sun and are carefully hand-sorted. Over the following 26-33 days, they’re turned regularly and sorted again, allowing the natural sugars and fruit flavours to gradually seep into the beans and develop depth and complexity in the cup.
