Nestled in the Antigua Valley in the shadow of three volcanoes, this is where Guatemalan coffee growing began. In 1864, Manuel Matheu — the sixth generation's great-great-great-grandfather — made a pivotal decision. His farm had been growing cochineal, the insect used to produce natural red dye, but the industrial revolution had just rendered it obsolete overnight.
