Description
High in the highlands of Baja Verapaz, 28 farming families from the Maya Achí community have been producing coffee together since 1982. The co-operative operates its own wet mill, invests in ongoing training, and — crucially — grows exceptionally good coffee. This Sarchimor is fully washed and medium roasted: gently rounded, creamy with milk chocolate, warming brown sugar sweetness, and a refreshingly clean citrus finish. It behaves impeccably across brew methods and is the sort of coffee that quietly becomes indispensable.
