Description

Honduras, El Paraíso. Oropéndulas is a collective coffee produced by seven small farms in the mountainous region of El Paraíso, Honduras. Led and processed by veteran producer Moisés Sosa, this lot reflects generations of local knowledge, with farms relying on community labour and traditional growing practices passed down over time. Sitting at altitudes of up to 2,000 metres, the farms grow varieties including Parainema, IHCAFE 90, and Lempira. Cherries are carefully processed at Moisés’ beneficio, where the coffee is fully washed, fermented for 24 hours, and then sun-dried on patios and raised beds.. Flavor profile: Winey.
