Jasmine, Clementine & Chamomile Origin: Fresno, Tolima, Colombia Process: Carbonic Maceration Varietal: Java Farm: El Vergel Estate Producer: Elias & Shady Bayter Altitude: 1450m Lot Size: 24kg Harvest Year: 2024 An experimental Carbonic Maceration from the El Vergel Estate yielding a distinctly crisp and citrus-forward cup profile, a unique characteristic for the Java varietal. CO2 is induced for 96 hours at a high pressure, breaking down the cascara during an anaerobic fermentation. The Java cherries are sun-dried on raised beds for 25 days and stabilised for 45 days before milling.. Flavor profile: Citrus Fruit, Floral.
